Here at Gleeson’s, we pride ourselves on sourcing the finest quality ingredients, chosen with care and respect for our local producers. Fortunately, we are surrounded by incredible suppliers who inspire every dish on our menu, created by Head Chef Kieran Brennan. In fact, all of our food is homemade by chefs who truly love what they do, and every plate is prepared with passion. In addition, our breads are baked fresh in-house each day, ensuring quality and flavour in every bite.
Meanwhile, many of the herbs used in our kitchen are lovingly grown by Mary Gleeson in the town house garden.
Not to be overlooked, Roscommon is lamb country, and we proudly serve organic lamb reared on the Gleeson family farm. Here, the lamb roams freely, grazing on lush grass and living naturally, which results in exceptional flavour. Naturally, it’s reared with care and cooked with pride, bringing true farm-to-table dining to your plate.
