Organic Lamb from Gleesons Family Farm

Roscommon is lamb country, and without a doubt, it doesn’t get better than our organic lamb from the Gleeson family farm.  Specifically, their organic lamb roams freely, grazes on lush grass, and is reared with care before being cooked with pride.

Moreover, the Gleeson family uses this exceptional lamb in many of their speciality dishes served in the restaurant.  Since 1995, Eamonn’s brother James Gleeson has successfully managed the 60-acre family farm, continuing the tradition with dedication.

In addition to farming, Gleeson’s play a key role in the annual Roscommon Lamb Festival, promoting local food and culture.  Meanwhile, Mary regularly features on local radio as a guest chef and shares recipes that highlight their home-reared lamb.  Beyond that, she has been invited to give live cooking demonstrations at food events both nationally and internationally.

For many years, Mary ran the kitchen at Gleeson’s and continues to supply herbs and flowers from her garden.  As a result, the townhouse kitchen enjoys a fresh supply of aromatic herbs and beautiful flowers straight from the garden.
